Spiced Candied Walnuts
Yield: 3 cups

  • 1 pound shelled walnuts
  • 1 cup sugar
  • 1/8 teaspoon ground red pepper
  • Vegetable oil
  • 1/2 teaspoon salt or more to taste
  1. Place walnuts in a medium stockpot. Cover with water, and boil for 1 minute. Drain but do not rinse. While nuts are still hot, transfer to a bowl, and toss with sugar and red pepper until well-coated.
  2. Heat 2 inches of oil in a large, heavy saucepan over medium-high heat. When oil is hot, add nuts in batches; fry for 2 to 3 minutes or until golden. Watch carefully because they can burn quickly. Using a slotted spoon, transfer each batch to a cookie sheet to cool. Season to taste with salt, and break apart when cool.
