The Pimm's Cup gets an elegant spin in the Pimm's Royale, where Champagne adds extra sparkle

It's "the most refreshing cocktail there is," says Louisiana writer and hostess Julia Reed about the Pimm's Royale―and we couldn't agree more. A twist on the venerable Pimm's Cup, this version substitutes Champagne for the usual lemon-lime soda. With a kiss of fresh mint and citrus, it sets just the right tone for a summer gathering.

PIMM'S ROYALE

Yield: 6 (1⁄2-cup) servings

1 1⁄2 cups Pimm's No.1
1 navel orange, halved and thinly sliced
1⁄2 cup packed fresh mint leaves
1 1⁄2 cups Brut Champagne, chilled
6 cucumber spears
Garnishes: fresh mint sprigs, orange slices

1. In a large pitcher, combine Pimm's, orange slices, and fresh mint leaves. Chill. Gently stir in Champagne just before serving.

2. To serve, place one cucumber spear in each glass; fill halfway with ice. Pour Pimm's mixture over ice. Garnish, if desired.

Note: To make an individual serving, use 1 3⁄4 ounces of Pimm's No. 1, 1 orange slice, 1 mint sprig, 1 3⁄4 ounces of Champagne (or more to taste), and 1 cucumber spear.
