It's “the most refreshing cocktail there is,” says Louisiana writer and hostess Julia Reed about the Pimm’s Royale—and we couldn’t agree more. A twist on the venerable Pimm’s Cup, this version substitutes Champagne for the usual lemon-lime soda. With a kiss of fresh mint and citrus, it sets just the right tone for a summer gathering.

PIMM'S ROYALE

Yield: 6 (1⁄2-cup) servings

1 1⁄2 cups Pimm’s No.1
1 navel orange, halved and thinly sliced
1⁄2 cup packed fresh mint leaves
1 1⁄2 cups Brut Champagne, chilled
6 cucumber spears
Garnishes: fresh mint sprigs, orange slices

1. In a large pitcher, combine Pimm’s, orange slices, and fresh mint leaves. Chill. Gently stir in Champagne just before serving.

2. To serve, place one cucumber spear in each glass; fill halfway with ice. Pour Pimm’s mixture over ice. Garnish, if desired.

Note: To make an individual serving, use 1 3⁄4 ounces of Pimm’s No. 1, 1 orange slice, 1 mint sprig, 1 3⁄4 ounces of Champagne (or more to taste), and 1 cucumber spear.
